What You’ll Need:
Main Ingredients:
1 small head of cauliflower (or 3 cups riced cauliflower)
1/2 cup breadcrumbs (regular or panko)
1/2 cup shredded cheddar cheese (or dairy-free alternative)
1/4 cup grated Parmesan cheese (optional, but adds flavor)
1 large egg
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika (optional, for color)
2 tablespoons chopped fresh parsley (optional)
For Cooking:
Cooking spray or a little oil (if baking)
Oil for frying (if deep frying or pan-frying)
For Dipping:
Ketchup, ranch, or your favorite dipping sauce
How to Make It:
Step 1: Prep the Cauliflower
If using a whole head of cauliflower, cut it into florets. Steam or boil the cauliflower for about 5 minutes until tender but not mushy. Drain well and let it cool slightly. Then, pulse it in a food processor until it resembles rice. If using pre-riced cauliflower, you can skip this step.
Step 2: Remove Excess Moisture
Place the riced cauliflower in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is important to prevent soggy tots!


Step 3: Mix the Ingredients
In a large bowl, combine the cauliflower, breadcrumbs, cheddar cheese, Parmesan (if using), egg, garlic powder, onion powder, salt, black pepper, paprika, and parsley. Mix well until everything is evenly combined. The mixture should be slightly sticky but hold together when pressed.
Step 4: Shape the Tots
Take about a tablespoon of the mixture and roll it into a small tot shape. Repeat with the remaining mixture and place the tots on a plate or baking sheet.
Step 5: Cook the Tots
Option 1: Bake (Healthier Option)
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper and lightly spray with cooking spray.
Arrange the tots on the sheet and spray the tops lightly with oil.
Bake for 20–25 minutes, flipping halfway through, until golden brown and crispy.
Option 2: Air Fry (Extra Crispy, Less Oil)
Preheat your air fryer to 375°F (190°C).
Lightly spray the basket with cooking spray.
Place the tots in a single layer and cook for 12–15 minutes, shaking the basket halfway through.
Option 3: Fry (Crunchiest Option)
Heat about 1/2 inch of oil in a pan over medium heat.
Fry the tots in batches, turning occasionally, until they are golden brown and crispy (about 3–4 minutes per batch).
Drain on paper towels.
Step 6: Serve and Enjoy!
Let the tots cool for a few minutes before serving. Pair them with ketchup, ranch, or your favorite dipping sauce.
