This Middle Eastern comfort food is made with just a few humble ingredients—lentils, rice, and caramelized onions—but the flavors are out of this world.

What You’ll Need:

Main Ingredients:

  • 1 cup brown or green lentils, rinsed

  • 1 cup long-grain white rice (or basmati rice)

  • 3 large onions, thinly sliced

  • 4 tablespoons olive oil

  • 4 cups water or vegetable broth

  • 1 teaspoon salt (adjust to taste)

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon cinnamon (optional, for warmth)

  • 1/4 teaspoon cayenne pepper (optional, for heat)

For Serving:

  • Fresh parsley, chopped (optional)

  • Plain yogurt or tzatziki (optional)

  • Lemon wedges

How to Make It:

Step 1: Cook the Lentils

In a medium pot, add the rinsed lentils and 3 cups of water. Bring to a boil, then reduce the heat to a simmer. Cook for about 15 minutes until the lentils are slightly tender but not fully cooked. Drain any excess water and set aside.

Step 2: Caramelize the Onions

While the lentils are cooking, heat the olive oil in a large pan over medium-low heat. Add the sliced onions and a pinch of salt.

Stir occasionally and cook for about 25–30 minutes until the onions become deep golden brown and caramelized. If they start to stick, add a splash of water.

Once done, remove about half of the onions and set them aside for garnish.

Step 3: Toast the Rice and Spices

To the pan with the remaining onions, add the rice, cumin, cinnamon, black pepper, and cayenne (if using). Stir well to coat the rice in the oil and spices. Let it cook for about 1–2 minutes until fragrant.

Step 4: Combine and Simmer

Add the cooked lentils to the pan with the rice. Pour in 4 cups of water or vegetable broth and add salt. Stir everything together and bring it to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15–20 minutes, or until the rice is fully cooked and the liquid is absorbed.

Step 5: Let It Rest

Turn off the heat and let the mujadara sit, covered, for 5–10 minutes. This helps the flavors meld together and gives the rice a fluffier texture.

Step 6: Fluff and Serve

Fluff the rice and lentils with a fork. Top with the reserved caramelized onions and a sprinkle of fresh parsley. Serve with lemon wedges, plain yogurt, or tzatziki for extra flavor.

Tips for the Best Mujadara:

  • Be patient with the onions – The key to amazing mujadara is deeply caramelized onions. Low and slow is the way to go!

  • Use the right lentils – Brown or green lentils hold their shape best. Avoid red lentils, as they become too mushy.

  • Rinse the rice – This helps remove excess starch and keeps the dish from becoming too sticky.

  • Customize it – Add a pinch of allspice for extra warmth or stir in some sautéed spinach for added greens.
