Plus, it's completely plant-based, so everyone can enjoy it! Whether you're vegan or just looking for a hearty, meat-free dish, this ramen hits all the right spots.
Let’s get cooking!
Ingredients:
For the Broth:
4 cups vegetable broth
2 cups water
1 tablespoon soy sauce (or tamari for gluten-free)
1 tablespoon miso paste (white or yellow)
1 tablespoon sesame oil
2 teaspoons chili paste or Sriracha (adjust based on spice preference)
1-inch piece of ginger, grated
2 cloves garlic, minced
For the Noodles & Toppings:
4 servings of ramen noodles (preferably fresh or whole wheat)
1 cup mushrooms, sliced (shiitake or cremini work great)
1/2 cup tofu, pressed and cubed (crispy fried tofu adds great texture)
1/2 cup baby spinach or bok choy
1/2 cup corn kernels (frozen or fresh)
1 tablespoon sesame seeds
1 green onion, chopped
1 boiled egg (optional for a non-vegan version)
Chili flakes or fresh red chili (for extra spice, optional)
A few sprigs of cilantro (optional, for garnish)

Instructions:
Step 1: Prepare the Broth
Start by making your spicy broth, which will be the heart of this ramen. In a large pot, combine the vegetable broth and water, and bring it to a gentle simmer over medium heat.
Add the soy sauce, miso paste, and sesame oil to the pot. Stir until the miso dissolves, and the broth is smooth.
Now, add the chili paste or Sriracha (depending on how spicy you want it), along with the freshly grated ginger and minced garlic. Let everything simmer for 10-15 minutes.
This allows the flavors to meld together. You’ll start to smell that irresistible combination of savory, spicy, and earthy goodness!
Taste it to adjust the seasoning—feel free to add a little more soy sauce for saltiness or more chili paste if you want extra heat.
Step 2: Cook the Noodles
While your broth is simmering, it’s time to cook the ramen noodles. Follow the package instructions, as cooking times can vary.
Once cooked, drain the noodles and rinse them under cold water to stop the cooking process. This also helps prevent them from becoming too sticky.
Step 3: Sauté the Veggies and Tofu
In a separate pan, heat a teaspoon of sesame oil over medium heat. Add the sliced mushrooms and sauté until they soften and get a little color, about 5-7 minutes.
While the mushrooms cook, cube the tofu and pat it dry with a paper towel. This step is key to getting crispy tofu!
Once the mushrooms are cooked, push them to the side of the pan and add the tofu. Sauté it on all sides until golden brown and crispy.
This will give your ramen that satisfying texture contrast.
Step 4: Assemble the Ramen
Once everything is ready, it’s time to assemble your bowl! Start by placing a portion of cooked noodles at the bottom of each bowl.
Pour the hot broth over the noodles, making sure they're nicely submerged. Then, top with sautéed mushrooms and crispy tofu.
Add the spinach (or bok choy) and corn for some freshness and crunch. For an extra pop of color and flavor, sprinkle some sesame seeds on top, followed by chopped green onions. If you like a little extra spice, throw in a few chili flakes or some thinly sliced fresh red chilies.
Finally, if you're feeling extra indulgent, add a boiled egg to each bowl (this step is optional if you're sticking to a vegan recipe). Garnish with a few sprigs of cilantro, and you’re good to go!
Step 5: Enjoy!
Take a moment to admire your beautiful bowl of spicy ramen. Now, grab your chopsticks, stir everything together, and take a big slurp!
The noodles will soak up that rich, flavorful broth, and the tofu adds the perfect crispy crunch. Each bite is packed with heat, umami, and just the right balance of veggies.
Customizing Your Ramen
Feel free to get creative! You can add other veggies like bok choy, carrots, or baby corn. Want to make it even spicier?
Try adding a drizzle of chili oil or more Sriracha. And if you’re craving something creamy, you can stir in a spoonful of peanut butter or coconut milk into the broth for extra richness.
