If you’re looking for a dessert that’s fresh, fruity, and downright delicious, strawberry shortcake is the way to go!
It’s light, sweet, and bursting with flavor from the juicy strawberries, fluffy whipped cream, and soft, buttery biscuits.
Whether you’re celebrating a special occasion or just craving something sweet, this classic treat will never disappoint. Ready to make the perfect strawberry shortcake?
Let’s dive right in though!
What You’ll Need:
For the Biscuits:
2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup cold unsalted butter (cut into small pieces)
2/3 cup milk (or non-dairy milk)
1 teaspoon vanilla extract
For the Strawberry Filling:
4 cups fresh strawberries, hulled and sliced
2 tablespoons sugar (optional, depending on the sweetness of your strawberries)
1 teaspoon vanilla extract
For the Whipped Cream:
1 cup heavy whipping cream (or coconut cream for a dairy-free version)
2 tablespoons powdered sugar
1 teaspoon vanilla extract
How to Make It:
Step 1: Preheat the Oven and Prepare the Biscuits
Start by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it to prevent the biscuits from sticking.
Step 2: Make the Biscuit Dough
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Add the cold butter to the bowl and use a pastry cutter, two forks, or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
You should see small pea-sized pieces of butter.
Step 3: Add the Wet Ingredients
Pour in the milk and vanilla extract, then stir the mixture until just combined.
Be careful not to over-mix; you want the dough to stay light and flaky. If the dough feels too dry, add a splash more milk.

Step 4: Form the Biscuits
Turn the dough out onto a floured surface and gently knead it a few times until it comes together.
Pat the dough into a 1-inch thick rectangle, then use a round biscuit cutter or the rim of a glass to cut out the biscuits.
Place them on the prepared baking sheet, making sure they’re close together but not touching.
Step 5: Bake the Biscuits
Pop the biscuits into the oven and bake for 12-15 minutes, or until they’re golden brown on top. Once baked, let them cool slightly while you prepare the strawberry filling and whipped cream.
Step 6: Prepare the Strawberry Filling
While the biscuits are baking, prepare the strawberries. Hull and slice the strawberries, then toss them with the sugar and vanilla extract. Let them sit for about 10-15 minutes to draw out their juices and make a sweet strawberry syrup.
Step 7: Whip the Cream
In a chilled bowl, beat the heavy cream with powdered sugar and vanilla extract until soft peaks form.
If you’re using coconut cream, make sure it’s well-chilled before whipping. Whip the cream on medium-high speed until it forms soft peaks, but don’t over-beat.
Step 8: Assemble the Shortcakes
To assemble, cut the warm biscuits in half horizontally. Spoon a generous amount of the macerated strawberries onto the bottom half of the biscuit, then top with a dollop of whipped cream. Place the top half of the biscuit on top and finish with a little more whipped cream and strawberries.
Step 9: Serve and Enjoy!
Serve the strawberry shortcakes immediately while they’re fresh and delicious. You can garnish with extra strawberries or even a sprinkle of mint for a pop of color!
Tips for Perfect Strawberry Shortcake:
Biscuits: The key to great shortcake biscuits is working quickly with cold butter and not over-mixing the dough. You want those little pockets of butter to melt while baking and create a flaky texture.
Whipped Cream: If you don’t have heavy cream, you can use coconut cream as a dairy-free alternative. Just make sure it’s well-chilled before whipping!
Strawberries: Let the strawberries macerate in sugar for at least 10 minutes so they release their juices. If the berries are extra sweet, you can skip the sugar.
These strawberry shortcakes are the perfect balance of light, fluffy biscuits, sweet strawberries, and creamy whipped cream.
They’re perfect for any time you need a sweet, refreshing dessert—whether it’s a sunny day or a special gathering.
Enjoy this easy, delicious treat with friends and family, and watch it disappear in no time!💖👇
