With a golden, crispy topping and a deliciously seasoned filling, this recipe is guaranteed to impress.

Now, let’s get started!

Ingredients

For the Mushrooms:

  • 12 large white or cremini mushrooms

  • 2 tablespoons olive oil

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

For the Filling:

  • ½ cup breadcrumbs (panko or regular)

  • 2 tablespoons olive oil or melted vegan butter

  • 3 cloves garlic, minced

  • ½ small onion, finely diced

  • ½ teaspoon dried oregano

  • ½ teaspoon dried thyme

  • ¼ teaspoon red pepper flakes (optional for heat)

  • ¼ cup chopped fresh parsley

  • ¼ cup nutritional yeast (or vegan parmesan)

  • 1 tablespoon lemon juice

Optional Add-Ins:

  • ¼ cup finely chopped spinach or kale

  • 2 tablespoons chopped sun-dried tomatoes

  • ¼ cup chopped walnuts or pecans for extra crunch

Instructions

Step 1: Prepare the Mushrooms

  1. Preheat your oven to 375°F (190°C).

  2. Clean the mushrooms with a damp paper towel to remove any dirt. Avoid rinsing them, as mushrooms absorb water and can become soggy.

  3. Gently twist off the stems and set them aside (you’ll use them in the filling).

  4. Place the mushroom caps on a baking sheet, drizzle with olive oil, and season with salt and black pepper. Set aside.

Step 2: Make the Filling

  1. Finely chop the mushroom stems.

  2. In a pan over medium heat, warm 2 tablespoons of olive oil.

  3. Add the chopped mushroom stems and onion, cooking for about 3–4 minutes until softened.

  4. Stir in the minced garlic, oregano, thyme, and red pepper flakes. Cook for another minute until fragrant.

  5. Remove from heat and mix in the breadcrumbs, nutritional yeast, parsley, and lemon juice. Stir until everything is well combined. If using spinach, sun-dried tomatoes, or nuts, add them in now.

Step 3: Stuff the Mushrooms

  1. Spoon the filling into each mushroom cap, pressing gently to pack it in.

  2. Arrange the stuffed mushrooms on the baking sheet, making sure they’re evenly spaced.

Step 4: Bake Until Golden

  1. Bake for 18–20 minutes, or until the mushrooms are tender and the tops are golden brown.

  2. If you like an extra crispy topping, switch the oven to broil for the last 1–2 minutes. Keep an eye on them to prevent burning.

Step 5: Serve & Enjoy

  1. Let the stuffed mushrooms cool for a few minutes before serving.

  2. Garnish with extra fresh parsley and a squeeze of lemon juice for a fresh finish.

Serving Ideas

These stuffed mushrooms are delicious on their own, but you can also:
